Here is an easy to cook recipe of chickpeas cream, by lovely Anna Reszka. It is definitely a healthy one and, you can prepare it by using either vegetable broth or chicken broth.
- 500 ml chicken soup/ vegetable broth
- 300 ml cooked chickpeas
- 1 diced onion
- 2 tbsp butter
- salt and pepper
- fresh parsley
In the pot we dissolve the butter, add diced onion and fry about 2 minutes. Next, we pour vegetable broth/ chicken soup and chickpeas. Cook the whole about 5 minutes gently stirring. In the end, we arę blessed with all the ingredients on a smooth mass.
* the parsley can be blended (the taste will be more pronounced ) or added to the decorator
* Best tasting with grissini(thin, crisp Italian breadsticks.) or croutons (a small piece of fried or toasted bread served with soup or used as a garnish.)
