Penne Pasta With Creamy Almond Basil Pesto Sauce










What we Need (Serves 2)

Penne: 3 hands full

For the sauce

Garlic: 4 cloves (roughly chopped)
Cheddar Cheese: 25 to 30 gms
Parmesan: 20 gms
Basil: 1 Cup Full
Almonds: Soaked overnight in water – 8 to 10
Milk: 1/2 to 1 cup
Chilli Flakes: as much as you like
Olive Oil: 2 TBPS + 1 TBPS
Butter: 1 tsp
Salt + Pepper to taste


Roughly Chopped Almonds – 2
Red Chill, Basil, Olive Oil & Parmesan



Bring water to Boil (add salt & oil to it) once boiling add Penne. Cook it for about 12 to 14 minutes and, keep it aside (if pre-made make sure you run cold water through them so that, it does not overcook).


– Add basil, soaked almonds and olive oil (2 TBPS) in a blender and make a paste.

– Take a saucepan, heat the olive oil + butter added chopped garlic and salt, let it cook for a bit and add pepper + chili flakes. Once the garlic is golden brown pour in the basil almond paste. Let it cook for 5 minutes. Next, add milk (I like a lot of sauce in my pasta so I would put a whole cup) once it comes to a boil grate in the cheddar & parmesan, as the cheese melts the sauce will thicken. After cooking it for a bit, check for salt + add your pasta! Let it dance in the sauce for a bit. And it’s ready to eat!


Rocky Almonds, if you want to add more feel free to toss in some basil + chilli flakes + olive oil + shaved parmesan!
